Ingredients

  • 2 ripe avocados

  • 1/4 cup red onion, finely chopped
  • 1 jalapeno, seeds removed and finely chopped
  • Juice of 1 lime
  • A handful of fresh coriander, chopped
  • Salt and pepper to taste

Method

Cut the avocados in half, remove the pits, and scoop out the flesh into a bowl. Mash the avocado with a fork until smooth, leaving some chunks for texture. Add the diced tomato, red onion, jalapeno, lime juice, and chopped cilantro to the bowl. Season with salt and pepper, then mix well until all the ingredients are combined. Method

In a jar or container, combine the rolled oats, plant-based milk, chia seeds, and maple syrup. Stir well to ensure all the ingredients are evenly mixed. Cover the jar/container and refrigerate overnight or for at least 4 hours. In the morning, give the oats a good stir and add your desired toppings. Enjoy your creamy and wholesome overnight oats on the go or at home!
